Today was one of those non-stop days where everything was just go, go, go. I should feel completely and utterly exhausted but I don’t. The main reason, I think, is because most of the afternoon was spent in cooking some delicious enchiladas – three big pans full – to take to some families in our ward (church) whose mothers have had surgery recently. Their families are being taken care of and a list was passed around on Sunday for volunteers to sign up to bring meals over. Speaking from past experience of being the recipient of many meals (this also happens whenever someone has a new baby) I knew the regular stand-bys of lasagna, tuna noodle casserole, or Chicken and Rice just wasn’t going to cut it. I hate when we get those meals or a variation of them for a whole week straight. In and of themselves they are yummy but collectively as a group, over and over again…..blech.
My daughters and I made the trek into town to deliver dinner. We were greeted at each house rather politely but I could tell by the looks on their faces the families were afraid to look and see what we’d brought over. I wish you could have seen how quickly their faces changed when I said, “I hope you like Mexican food. I call these half-authentic Chicken Enchiladas since I’m only half Mexican.” POUNCE! The dishes were whisked away in a heartbeat with exclamations of “We LOVE Mexican food!” One grateful hug and thank you was all it took to let me know we had SCORED!
All this to make you wait until tomorrow to get the recipe for the Enchiladas. 😀

I’m not officially Mexican. But growing up in Arizona and eating Mexican food since my high chair days ought to give me honorary status. I make my own tortillas. Frijoles are on the menu daily. I grow jalapeños, pablano, and serrano peppers in my garden. I make salsa. While pregnant with #1 son, I craved Nachos with jalapeños and ate them daily. What do you think, do I qualify?
What is your enchilada recipe. Do you use chicken or beef or what? Do tell.

That’s so funny…when people bring me meals, I usually get a couple pans of enchiladas over the week. LOL.
Reminds me of how we got 3 duplicates on flatware, but no vacuum for our wedding, and friends of ours got 3 vacuums and no flatware.

the best meal I had given when I had a baby was a friend who made chicken alfredo linguine, salad, sparkling grape juice, and she made a huge sweet slice to give to visitors if they came, so I didnt feel I had to provide for all the visitors when they came to see the baby… It was wonderful and thoughtful and I have done the same a few times to others

I like to give enchiladas every once in a while to people, too. Especially since I usually make a big batch of them and freeze them so I have extras in the freezer anyway.

Enchiladas are a great idea. I’m cooking tomorrow morning for a new friend with a baby: a pot of Tortilla soup, and another of a chick pea/kielbasa/carrot stew. Both freeze well. Neither is lasagna. 🙂 I’d love your recipe too, if you ever feel like sharing.

funny! when i had my third baby we had enchiladas brought in three nights in a row! i guess that the standbys in california are different. (incidentally, the third night they were authentic and so i didn’t even mind having them again!)

I would have loved to receive Chicken Enchiladas! When my son was born, we had meals delivered for a week…and while it was great, it’s hard to get over-joyous about a chicken casserole. But boy, the authentic Swedish Meatballs that we received were FABULOUS!

My go-to meal for taking into homes is pasta salad. Especially for the new Mamas. It can be eaten any time without heating or anything – makes a great mid-night-feeding snack and can be delivered in a plastic bag so there’s no dish to return.
But I certainly wouldn’t turn my nose up homemade Enchiladas! Is there anyone in the world who would? Can’t wait for the recipe.

I too find that people often go the casserole route – we have been pretty fortunate with our meals when I had my babies – however the one time – each family made for us Chicken pot pie – I didn’t tell them of course – but I didn’t want to see that dish for awhile.

I’ll have to try your recipe. My dad used to make enchiladas (Mexico City was his mission) but I haven’t had them in forever. I never know what to take to people, homemade chicken noodle soup seems to be my current standby accompanied by a fresh loaf of homemade bread which is always welcomed.
