Every once in a while I crave something that’s not chocolate. Shocking. I know. This spice cake always seems to hit the spot. I started making this cake way back when I was about 13. I love it served without frosting and big dollop of cool whip or for breakfast in a bowl with milk. Mmmmm…
Spice Cake
2 cups flour
1 1/2 cups sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1 cup buttermilk
1/4 cup margarine or butter, softened
1/4 cup shortening
1/2 tsp. vanilla
3 eggs
In a bowl combine all the dry ingredients. Add buttermilk, butter, shortening, and vanilla. Beat with an electric mixer on low speed until combined. Beat 2 minutes on high speed. Add eggs and beat 2 minutes more.
Pour batter into a greased 9x13x2 inch cake pan. Bake at 350 degrees for 30 to 35 minutes or till a toothpick inserted near the center comes out clean. Cool on a wire rack. Serves 12.
