Petite Watermelons
1 small box of red Jello
Cut both limes in half lengthwise. Scoop out all the fruit with a spoon. Place the limes in a muffin tin to keep them from tipping over. Make the box of Jello according to the Jiggler directions. Carefully spoon Jello into the limes halves. Chill until almost firm. Using a skewer push the mini chocolate chips into the Jello for “watermelon seeds.” Chill until until firm, then cut into slices.

I’ve seen this technique used with oranges and orange Jello, but this is a great way to take advantage of different colors and create something different!

So I tried this and they looked great, but…BITTER, BITTER, BITTER!!!! How do you get them not to take on the bitter lime rind???

Well, my kids actually love to suck on lemons and limes so I guess I never thought about the limey flavor the jello gets.
A couple of things to try:
sprinkle the insides with sugar before filling with jello to off-set the sour lime taste
If it’s the rind that is making it sour don’t scrape out the pulp all the way to the lime. (My kids usually do the scraping part so it never gets all the way to the rind anyway).

I know this post was written a year ago, but I just had to comment! Here in Australia, a popular kids party treat is “frog in the pond” – a freddo frog (chocolate) in jelly (or jell-o, in America – usually blue).
Anway, I hate when chocolate goes all soggy from sitting in liquid, so I had to interrupt and point out that even better than chocolate chips would be … passionfruit pips! (If you just happened to have them around, anyway)
